Judy Barbe, RDN

Judy Barbe is a registered dietitian who has been bringing realistic solutions to tables for more than 20 years. As the author of Your 6-Week Guide to LiveBest, Simple Solutions for Fresh Food & Well-Being and LiveBest Seasonally, a Fresh Approach to Living with Vitality, she shows people how to make better-for-you choices through her website, original recipes, speaking engagements, newspaper columns, blogs and webinar series.

Judy’s unique perspective includes representing local dairy farmers, participating in her own family’s cattle ranch and being a beekeeper. These farm-to-table experiences help her bridge the gap between urban customers and today’s modern farming practices.

Judy educates both nutrition professionals and the public on the topic of food waste, providing ideas they can implement at home to be part of the solution to this global concern. Her recipes and recommendations have been featured on MensFitness.com, Lovoinc.com, Shape.com, FitnessMagazine.com, FilmJournal.com, and WeightWatchers.com.

It’s hard to pick just one but my favorite way to do M.O.R.E. with dinner is being involved every step of the process! To elaborate every spring and summer I spend time planting a garden full of fruits and veggies that I can incorporate into meals. I even built a compost box to reuse some of those kitchen scraps for nutritious soil. It’s is such a fun and rewarding experience to be able to eat what you have grown and re-purpose what you don’t!
