Avocado Lime Mayonnaise

  • 1 ripe avocado
  • 2 tablespoons extra-virgin olive oil
  • Juice of 1 lime about 2 tablespoons
  • Zest of 1 lime
  • ΒΌ teaspoon salt
  • 2 tablespoons water optional


  • In a food processor or blender, add the avocado, olive oil, lime juice and zest, and salt. Blend until smooth, adding the water, if needed, to make a creamy texture.
